Start by choosing the right steak. Look for steaks that are at least one inch thick and have even marbling throughout. Be sure to season the steak with salt and pepper before grilling. Preheat the grill to high heat, around 500 degrees. Place the steak directly over the flame and cook for 5 to 7 minutes per side, flipping once. For a perfect medium-rare rib-eye steak, cook to an internal temperature of 135 degrees. Let the steak rest for five minutes before slicing.
