Ingredients
- 1/2 cup creamy peanut butter
- 1 cup mashed potatoes
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
Directions
- In a medium bowl, mix together the peanut butter, mashed potatoes, sugar, vanilla extract, cinnamon, nutmeg and salt until well combined.
- Shape the mixture into small balls and place on a parchment lined baking sheet. Refrigerate for at least 30 minutes.
- Melt the chocolate chips in a double boiler or in the microwave.
- Dip each ball in the melted chocolate, making sure to coat completely. Place on a parchment lined baking sheet and refrigerate for at least 15 minutes.
