In a medium bowl, mix together the peanut butter, mashed potatoes, sugar, vanilla extract, cinnamon, nutmeg and salt until well combined.
Shape the mixture into small balls and place on a parchment lined baking sheet. Refrigerate for at least 30 minutes.
Melt the chocolate chips in a double boiler or in the microwave.
Dip each ball in the melted chocolate, making sure to coat completely. Place on a parchment lined baking sheet and refrigerate for at least 15 minutes.
