- 3 ripe bananas, peeled and sliced
- 3 cups milk
- 3 eggs, lightly beaten
- 1/2 cup sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon vanilla extract
- 1/2 cup crushed cookies (optional)

Directions
- Preheat oven to 350 degrees F.
- In a medium saucepan, add the milk, eggs, sugar, cornstarch, and salt. Whisk until combined.
- Bring the mixture to a boil over medium-high heat, whisking constantly. Once boiling, reduce the heat to low and continue to cook for 3-4 minutes, whisking constantly until the mixture is thick and creamy.
- Remove from heat and stir in the nutmeg and vanilla extract.
- In an 8x8 inch baking dish, layer the banana slices. Pour the pudding mixture over the bananas.
- Bake for 20-25 minutes, or until the pudding is set and the top is golden brown.
- Remove from oven and let cool completely.
- Sprinkle crushed cookies over the top, if desired, and drizzle with honey. Serve and enjoy!
