Ingredients

  • 2 pounds chicken, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper
  • 1 cup coconut milk
  • 1/4 cup chopped fresh cilantro
  • Salt, to taste

Directions

  1. Heat a large skillet over medium heat. Add the chicken, garlic, and onion. Cook, stirring occasionally, until the chicken is lightly browned and the onion is softened, about 5 minutes.
  2. Add the curry powder, turmeric, cumin, coriander, cinnamon, and cayenne pepper. Stir to coat the chicken with the spices. Cook for 1 minute.
  3. Add the coconut milk and bring to a simmer. Reduce the heat to low and simmer, stirring occasionally, until the chicken is cooked through, about 25 minutes.
  4. Stir in the cilantro and season with salt, to taste.
  5. Serve over steamed rice.
