Ingredients

  • 6 jalapeno peppers, halved lengthwise and seeded
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup panko bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons melted butter

Directions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. In a medium bowl, mix together cream cheese, cheddar cheese, Monterey Jack cheese, garlic powder, salt, and pepper.
  3. Stuff each jalapeno half with the cheese mixture.
  4. In a shallow bowl, mix together the panko bread crumbs and Parmesan cheese. Dip the stuffed jalapenos in the melted butter, then roll in the bread crumb mixture to coat.
  5. Place the coated jalapenos on a baking sheet. Bake in preheated oven for 15 minutes, or until golden brown.
