Ingredients
1 cup all-purpose flour
1 teaspoon baking powder
3/4 cup white sugar
1/2 teaspoon salt
1/2 cup butter, melted
2 eggs
1 teaspoon vanilla extract
1/2 cup crushed pineapple, drained
1/2 cup lime juice
1/2 cup flaked coconut
1/2 cup chopped nuts (optional)
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch pie plate.
In a medium bowl, sift together the flour, baking powder, sugar and salt. Stir in the melted butter and eggs.
Stir in the vanilla extract, pineapple, lime juice, coconut and nuts. Pour into the prepared pie plate.
Bake in preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Cool on a wire rack before serving.
