Ingredients
- 2lbs potatoes
- 2 hard boiled eggs
- 3 tablespoons mayonnaise
- 2 tablespoons mustard
- 2 tablespoons pickle relish
- 2 tablespoons chopped parsley
- Salt and pepper, to taste
Directions
- Peel and cube the potatoes. Boil them in a pot of salted water until they are fork-tender.
- Drain the potatoes and transfer them to a large bowl. Allow them to cool for a few minutes.
- Peel and chop the hard boiled eggs and add them to the bowl with the potatoes.
- In a small bowl, combine the mayonnaise, mustard, pickle relish, and parsley. Mix until smooth.
- Pour the dressing over the potatoes and eggs and mix until everything is evenly coated.
- Season with salt and pepper, to taste.
- Serve chilled or at room temperature.
