Ingredients

  • 1 (3-4 lb) prime rib roast
  • 3 tablespoons kosher salt
  • 1 tablespoon freshly ground black pepper
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1/4 cup prepared horseradish
  • 2 tablespoons freshly squeezed lemon juice
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley

Directions

  1. Preheat oven to 500 degrees F (260 degrees C).
  2. Rub the roast with the salt and pepper. Place in a roasting pan and drizzle with olive oil.
  3. Roast in the preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C), and continue roasting for 1 hour for medium-rare.
  4. Remove from oven and let rest 10 minutes before slicing.
  5. In a medium saucepan, combine the cream, horseradish, lemon juice, garlic, and parsley. Simmer over medium heat until thickened, about 10 minutes.
  6. Slice the roast and serve with the horseradish sauce.
