Ingredients
- 1 (3-4 lb) prime rib roast
- 3 tablespoons kosher salt
- 1 tablespoon freshly ground black pepper
- 2 tablespoons olive oil
- 1/2 cup heavy cream
- 1/4 cup prepared horseradish
- 2 tablespoons freshly squeezed lemon juice
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
Directions
- Preheat oven to 500 degrees F (260 degrees C).
- Rub the roast with the salt and pepper. Place in a roasting pan and drizzle with olive oil.
- Roast in the preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C), and continue roasting for 1 hour for medium-rare.
- Remove from oven and let rest 10 minutes before slicing.
- In a medium saucepan, combine the cream, horseradish, lemon juice, garlic, and parsley. Simmer over medium heat until thickened, about 10 minutes.
- Slice the roast and serve with the horseradish sauce.
