Ribboned Fudge Cake
Ingredients
2 cups all-purpose flour
1 teaspoon salt
1 cup (2 sticks) cold butter, cut into pieces
3-4 tablespoons ice water
1 cup packed dark brown sugar
1/2 cup light corn syrup
3 tablespoons butter, melted
1 teaspoon vanilla extract
3 large eggs, lightly beaten
2 cups chopped pecans
Directions
Preheat oven to 375°F.
In a medium bowl, combine flour and salt. Cut in butter until mixture resembles coarse meal.
Sprinkle with water, 1 tablespoon at a time, and mix until dough comes together. Gently knead dough into a ball.
On a lightly floured surface, roll out dough to about 1/8-inch thick. Cut into desired shapes and transfer to ungreased baking sheets.
In a medium bowl, combine brown sugar, corn syrup, melted butter, vanilla, and eggs. Mix well.
Fold in pecans and spoon mixture into tart shells.
Bake for 20-25 minutes, or until tarts are golden brown.
Let cool before serving.
