Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup (2 sticks) cold butter, cut into pieces
  • 3-4 tablespoons ice water
  • 1 cup packed dark brown sugar
  • 1/2 cup light corn syrup
  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 3 large eggs, lightly beaten
  • 2 cups chopped pecans

Directions

  1. Preheat oven to 375°F.
  2. In a medium bowl, combine flour and salt. Cut in butter until mixture resembles coarse meal.
  3. Sprinkle with water, 1 tablespoon at a time, and mix until dough comes together. Gently knead dough into a ball.
  4. On a lightly floured surface, roll out dough to about 1/8-inch thick. Cut into desired shapes and transfer to ungreased baking sheets.
  5. In a medium bowl, combine brown sugar, corn syrup, melted butter, vanilla, and eggs. Mix well.
  6. Fold in pecans and spoon mixture into tart shells.
  7. Bake for 20-25 minutes, or until tarts are golden brown.
  8. Let cool before serving.
