Ingredients
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup (2 sticks) cold butter, cut into pieces
- 3-4 tablespoons ice water
- 1 cup packed dark brown sugar
- 1/2 cup light corn syrup
- 3 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 3 large eggs, lightly beaten
- 2 cups chopped pecans
Directions
- Preheat oven to 375°F.
- In a medium bowl, combine flour and salt. Cut in butter until mixture resembles coarse meal.
- Sprinkle with water, 1 tablespoon at a time, and mix until dough comes together. Gently knead dough into a ball.
- On a lightly floured surface, roll out dough to about 1/8-inch thick. Cut into desired shapes and transfer to ungreased baking sheets.
- In a medium bowl, combine brown sugar, corn syrup, melted butter, vanilla, and eggs. Mix well.
- Fold in pecans and spoon mixture into tart shells.
- Bake for 20-25 minutes, or until tarts are golden brown.
- Let cool before serving.
