Ingredients

  • 1 cup dry whole wheat macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups milk
  • 2 cups shredded cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup plain Greek yogurt
  • 1/4 cup diced green onions

Directions

  1. Preheat oven to 350 degrees F.
  2. Cook the macaroni according to package instructions.
  3. In a large saucepan, melt the butter over medium heat. Add the flour, salt, and pepper and whisk for 1 minute.
  4. Gradually add the milk, whisking continuously. Cook until the mixture is thick and bubbly.
  5. Remove from heat and stir in the cheese, yogurt, and green onions.
  6. Stir in the cooked macaroni.
  7. Pour into a 9x13-inch baking dish.
  8. Sprinkle the top with Parmesan cheese.
  9. Bake for 30 minutes or until golden brown.
