Ingredients

  • 2 pork tenderloins
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon ground black pepper
  • 1 teaspoon sea salt
  • 2 tablespoons olive oil
  • 2 cups fresh blackberries
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey

Directions

  1. In a small bowl, combine garlic powder, onion powder, smoked paprika, oregano, black pepper, and sea salt. Rub the mixture on both sides of the pork tenderloins. Place in a zipper-lock bag and refrigerate for at least an hour.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the pork tenderloins and cook for 4 minutes per side, or until golden brown and cooked through.
  3. Meanwhile, in a medium saucepan, combine the blackberries, balsamic vinegar, and honey. Bring to a boil, reduce heat to low, and simmer for 10 minutes. Remove from heat and mash the blackberries with a fork.
  4. Serve the pork tenderloins with the blackberry sauce.
