Ingredients
- 1/2 cup coconut flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 ripe bananas, mashed
- 1/4 cup coconut oil, melted
- 1/4 cup honey
- 2 eggs, whisked
- 1 teaspoon vanilla extract
- 1/2 cup walnuts, chopped
Directions
- Preheat the oven to 375°F.
- In a medium bowl, whisk together the coconut flour, baking powder, baking soda, and salt.
- In a separate bowl, mix together the mashed bananas, coconut oil, honey, eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until well combined.
- Fold in the chopped walnuts.
- Grease a 12-cup muffin tin and fill each cup with the batter.
- Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
