Ingredients

  • 1/2 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 ripe bananas, mashed
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 2 eggs, whisked
  • 1 teaspoon vanilla extract
  • 1/2 cup walnuts, chopped

Directions

  1. Preheat the oven to 375°F.
  2. In a medium bowl, whisk together the coconut flour, baking powder, baking soda, and salt.
  3. In a separate bowl, mix together the mashed bananas, coconut oil, honey, eggs, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until well combined.
  5. Fold in the chopped walnuts.
  6. Grease a 12-cup muffin tin and fill each cup with the batter.
  7. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
