Ingredients

  • 2 cups whole wheat flour
  • 1 cup old-fashioned oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup unsweetened applesauce
  • 1/4 cup honey
  • 1/4 cup melted butter or coconut oil
  • 2 eggs
  • 1/2 cup raisins (optional)

Directions

  1. Preheat oven to 350°F and grease a 9x5-inch loaf pan with butter or coconut oil.
  2. In a medium bowl, whisk together flour, oats, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, combine applesauce, honey, melted butter or coconut oil, and eggs.
  4. Add wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in raisins, if desired.
  6. Pour batter into the prepared loaf pan and bake for 50-60 minutes, until a toothpick inserted in the center comes out clean.
  7. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.
