Ingredients
- 2 cups whole wheat flour
- 1 cup old-fashioned oats
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup unsweetened applesauce
- 1/4 cup honey
- 1/4 cup melted butter or coconut oil
- 2 eggs
- 1/2 cup raisins (optional)
Directions
- Preheat oven to 350°F and grease a 9x5-inch loaf pan with butter or coconut oil.
- In a medium bowl, whisk together flour, oats, baking powder, baking soda, cinnamon, and salt.
- In a separate bowl, combine applesauce, honey, melted butter or coconut oil, and eggs.
- Add wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
- Fold in raisins, if desired.
- Pour batter into the prepared loaf pan and bake for 50-60 minutes, until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.
