Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 jalapeno, diced
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained and rinsed
  • 1 (14.5 oz) can chicken broth
  • 1/2 cup shredded cheddar cheese
  • Sour cream, for topping
  • Cilantro, for topping

Directions

  1. In a large pot over medium-high heat, cook the ground beef, onion, bell pepper, and jalapeno until the beef is no longer pink, about 5 minutes.
  2. Add the garlic and cook for another minute.
  3. Stir in the chili powder, cumin, oregano, paprika, salt, and pepper and cook for another minute.
  4. Add the tomatoes, beans, corn, and chicken broth and bring to a boil.
  5. Reduce the heat to low and simmer for 15 minutes.
  6. Serve topped with shredded cheese, sour cream, and cilantro.
