Ingredients
- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 1 jalapeno, diced
- 2 cloves garlic, minced
- 2 tablespoons chili powder
- 2 teaspoons cumin
- 1 teaspoon oregano
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained and rinsed
- 1 (14.5 oz) can chicken broth
- 1/2 cup shredded cheddar cheese
- Sour cream, for topping
- Cilantro, for topping
Directions
- In a large pot over medium-high heat, cook the ground beef, onion, bell pepper, and jalapeno until the beef is no longer pink, about 5 minutes.
- Add the garlic and cook for another minute.
- Stir in the chili powder, cumin, oregano, paprika, salt, and pepper and cook for another minute.
- Add the tomatoes, beans, corn, and chicken broth and bring to a boil.
- Reduce the heat to low and simmer for 15 minutes.
- Serve topped with shredded cheese, sour cream, and cilantro.
