Ingredients
- 1 lb. pork shoulder, cubed
- 3 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground coriander
- 2 tablespoons honey
- 1/4 cup tomato sauce
- 2 tablespoons apple cider vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup water
- 1 cup cooked black beans
- 1/2 cup diced tomatoes
- 1/2 cup diced bell peppers
- 1/4 cup chopped fresh cilantro
- 8-10 burrito-sized tortillas
Directions
- Heat the olive oil in a large skillet over medium-high heat. Add the pork cubes and cook, stirring often, until lightly browned, about 5 minutes.
- Add the onion and garlic and cook until softened, about 5 minutes. Add the cumin, chili powder, smoked paprika, and coriander and cook for 1 minute.
- Add the honey, tomato sauce, vinegar, salt, pepper, and water and stir to combine. Bring to a simmer and cook until the pork is cooked through and the sauce has thickened, about 10 minutes.
- Add the black beans, tomatoes, bell peppers, and cilantro and stir to combine. Cook until the vegetables are just softened, about 5 minutes.
- Divide the pork mixture among the tortillas and roll up. Serve warm.
