Ingredients

  • 2 cups of cooked ground beef
  • 1 package of taco seasoning
  • 1 can of black beans, drained
  • 1 can of corn, drained
  • 1 diced red bell pepper
  • 1 diced jalapeno
  • 1 cup of salsa
  • 1 cup of shredded cheese
  • 1 package of large pasta shells

Directions

  1. Preheat oven to 350 degrees F.
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain off any excess grease.
  3. Add the taco seasoning, black beans, corn, red bell pepper, jalapeno, and salsa. Cook for an additional 5 minutes.
  4. In a 9x13 inch baking dish, spread a layer of the beef mixture. Top with a layer of shredded cheese.
  5. Fill each pasta shell with the beef mixture and place in the baking dish.
  6. Top with remaining cheese and bake for 20 minutes.
  7. Serve and enjoy!
