Ingredients
- 1 pound ground chicken
- 1/3 cup bread crumbs
- 1/3 cup grated Parmesan cheese
- 1/4 cup minced fresh parsley
- 2 cloves garlic, minced
- 2 tablespoons minced fresh sage
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs, lightly beaten
- 4 slices prosciutto, diced
- 1/4 cup butter
Directions
- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x5 inch loaf pan.
- In a large bowl, mix together the ground chicken, bread crumbs, Parmesan cheese, parsley, garlic, sage, salt, pepper, and eggs. Mix until just combined.
- Press the mixture into the prepared loaf pan. Bake in preheated oven for 25 minutes.
- Meanwhile, melt the butter in a medium skillet over medium heat. Add the prosciutto and cook until lightly browned. Sprinkle the prosciutto over the top of the meatloaf.
- Return to oven and bake for an additional 25 minutes, or until the internal temperature of the meatloaf has reached 165 degrees F (74 degrees C).
- Let cool for 5 minutes before serving.
