Ingredients
4 russet potatoes
1/4 cup of butter
1/2 cup of shredded cheddar cheese
1 package of sloppy Joe mix
1/2 cup of water
Directions
Preheat the oven to 375 degrees F.
Wash and dry the potatoes. Prick each potato a few times with a fork.
Place the potatoes on a baking sheet and bake for 45 minutes or until the potatoes are tender.
Meanwhile, melt the butter in a medium saucepan over medium heat. Add the sloppy Joe mix and water and stir until everything is combined.
Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes, stirring occasionally.
Once the potatoes are done, cut each one in half and scoop out the insides, leaving a little bit of the potato in each half.
Fill each potato half with the sloppy Joe mixture and top with the shredded cheese.
Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
