Ingredients
- 1 pound ground pork
- 1/2 cup shredded carrots
- 1/2 cup diced onions
- 1/2 cup diced celery
- 1/4 cup soy sauce
- 2 cloves garlic, minced
- 1/4 teaspoon ground black pepper
- 2 tablespoons vegetable or canola oil
- 1 package spring roll wrappers
- Vegetable or canola oil, for frying
Directions
- In a large skillet, cook pork over medium heat until no longer pink. Drain off any excess fat.
- Add carrots, onions, celery, soy sauce, garlic, and pepper. Cook, stirring occasionally, until vegetables are tender and pork is cooked through, about 10 minutes.
- Remove from heat and set aside to cool.
- To assemble the lumpia, place a wrapper on a flat surface. Put about 2 tablespoons of the pork mixture in the center of the wrapper.
- Fold up the bottom of the wrapper and tuck it over the filling. Fold in the sides and roll up the wrapper, sealing the edges with a little water to make them stick.
- Repeat with remaining wrappers and filling.
- Heat oil in a large skillet over medium heat. Fry lumpia, in batches, until golden brown, about 2 minutes per side. Drain on paper towels.
- Serve with sweet and sour dipping sauce.
