Ingredients
- 1 lb of Beef Heart
- 2 tablespoons of Olive Oil
- 1 Onion (chopped)
- 2 cloves of Garlic (minced)
- 1 cup of dry Red Wine
- 2 cups of Beef Stock
- 1 teaspoon of Dried Oregano
- 1 teaspoon of Dried Thyme
- 2 Bay Leaves
- Salt and Pepper to taste
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the beef heart and onion and cook until the heart is lightly browned and the onion is softened, about 5 minutes.
- Add the garlic and cook until fragrant, about 1 minute.
- Add the wine and simmer until the liquid is reduced by half, about 10 minutes.
- Add the beef stock, oregano, thyme, bay leaves, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes.
- Remove the bay leaves before serving.
