Ingredients
- 1 pound boneless, skinless chicken thighs
- 1/2 cup coconut milk
- 2 cloves garlic, minced

Directions
- In a bowl, mix together the coconut milk, garlic, ginger, lemongrass, fish sauce, lime juice, brown sugar, cumin, salt, and pepper.
- Add the chicken thighs to the marinade and mix until evenly coated.
- Cover and refrigerate for at least 30 minutes.
- Preheat a grill to medium-high heat.
- Lightly oil the grill grates.
- Grill the chicken thighs for 8-10 minutes per side, or until the internal temperature reaches 165°F.
