Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1/2 cup coconut milk
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon fresh lemongrass, minced
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1/4 teaspoon ground cumin
  • Salt and pepper, to taste

Directions

  1. In a bowl, mix together the coconut milk, garlic, ginger, lemongrass, fish sauce, lime juice, brown sugar, cumin, salt, and pepper.
  2. Add the chicken thighs to the marinade and mix until evenly coated.
  3. Cover and refrigerate for at least 30 minutes.
  4. Preheat a grill to medium-high heat.
  5. Lightly oil the grill grates.
  6. Grill the chicken thighs for 8-10 minutes per side, or until the internal temperature reaches 165°F.
