Ingredients
- 1 pound of diced ham
- 1 cup of dry white beans, soaked overnight
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 tablespoons of olive oil
- 4 cups of chicken stock
- 1 teaspoon of dried thyme
- 1 teaspoon of dried oregano
- 1 bay leaf
- Salt and pepper to taste
Directions
- In a large pot, heat the olive oil over medium-high heat.
- Add the diced onion and garlic and cook until softened, about 5 minutes.
- Add the diced ham and cook until lightly browned, about 5 minutes.
- Add the soaked beans, chicken stock, thyme, oregano, bay leaf, and salt and pepper to the pot.
- Bring the mixture to a boil, then reduce the heat and simmer until the beans are tender, about 30 minutes.
- Serve warm with crusty bread or over cooked grains.
