Ingredients
1 pound of diced ham
1 cup of dry white beans, soaked overnight
1 onion, diced
3 cloves of garlic, minced
2 tablespoons of olive oil
4 cups of chicken stock
1 teaspoon of dried thyme
1 teaspoon of dried oregano
1 bay leaf
Salt and pepper to taste
Directions
In a large pot, heat the olive oil over medium-high heat.
Add the diced onion and garlic and cook until softened, about 5 minutes.
Add the diced ham and cook until lightly browned, about 5 minutes.
Add the soaked beans, chicken stock, thyme, oregano, bay leaf, and salt and pepper to the pot.
Bring the mixture to a boil, then reduce the heat and simmer until the beans are tender, about 30 minutes.
Serve warm with crusty bread or over cooked grains.
