Ingredients

  • 1 pound of diced ham
  • 1 cup of dry white beans, soaked overnight
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 4 cups of chicken stock
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried oregano
  • 1 bay leaf
  • Salt and pepper to taste

Directions

  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the diced onion and garlic and cook until softened, about 5 minutes.
  3. Add the diced ham and cook until lightly browned, about 5 minutes.
  4. Add the soaked beans, chicken stock, thyme, oregano, bay leaf, and salt and pepper to the pot.
  5. Bring the mixture to a boil, then reduce the heat and simmer until the beans are tender, about 30 minutes.
  6. Serve warm with crusty bread or over cooked grains.
