In a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon and drain on paper towels. Reserve 2 tablespoons of the drippings in the skillet and discard the rest.
Add the onion to the reserved bacon drippings in the skillet and cook over medium heat until tender. Remove from heat.
In a medium bowl, beat the eggs until light and fluffy. Stir in the half-and-half, salt and pepper.
Sprinkle the bacon and onion into the unbaked pie crust. Top with the shredded cheese. Pour the egg mixture over the top.
Bake in preheated oven for 25 to 30 minutes, or until a knife inserted in the center comes out clean.
