Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cups cooked chicken, shredded
  • 6 cups chicken broth
  • 1/4 cup miso paste
  • 1/4 cup mirin
  • 1 tablespoon soy sauce
  • 2 tablespoons sake
  • 2 tablespoons sesame oil
  • 2 tablespoons scallions, chopped
  • 1/4 cup cilantro, chopped

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery. Cook, stirring occasionally, until the vegetables have softened, about 5 minutes.
  2. Add the chicken broth, miso paste, mirin, soy sauce, sake, and sesame oil. Bring to a simmer and cook for 10 minutes.
  3. Stir in the cooked chicken and simmer for 10 minutes.
  4. Stir in the scallions and cilantro and cook for 1 minute. Serve hot.
