Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup packed light brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2 cups finely chopped apples (about 2 large apples)
  • ½ cup chopped walnuts (optional)

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
  2. In a medium bowl, sift together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a large bowl, beat together the brown sugar, oil, eggs, and vanilla until light and creamy.
  4. Stir in the dry ingredients until just blended. Fold in the apples and walnuts.
  5. Spread the batter into the prepared pan.
  6. Bake for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  7. Let cool in the pan for 10 minutes, then turn out onto a wire rack and cool completely.
