Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 pound pork tenderloin, cut into cubes
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1 butternut squash, peeled and cut into cubes
- 1/2 cup chicken broth
- 1/4 cup chopped fresh parsley, for garnish
Directions
- In a large skillet, heat the oil over medium-high heat. Add the onion and garlic and cook, stirring, for 2 minutes.
- Add the pork and cook, stirring, for 3 minutes. Add the cumin, paprika, coriander, cinnamon, pepper and salt and cook, stirring, for 1 minute.
- Add the squash and chicken broth and bring to a boil. Reduce the heat to low and simmer, covered, for 15 minutes.
- Uncover and cook for 5 minutes, or until the pork and squash are cooked through.
- Garnish with parsley and serve.
