Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound pork tenderloin, cut into cubes
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1 butternut squash, peeled and cut into cubes
  • 1/2 cup chicken broth
  • 1/4 cup chopped fresh parsley, for garnish

Directions

  1. In a large skillet, heat the oil over medium-high heat. Add the onion and garlic and cook, stirring, for 2 minutes.
  2. Add the pork and cook, stirring, for 3 minutes. Add the cumin, paprika, coriander, cinnamon, pepper and salt and cook, stirring, for 1 minute.
  3. Add the squash and chicken broth and bring to a boil. Reduce the heat to low and simmer, covered, for 15 minutes.
  4. Uncover and cook for 5 minutes, or until the pork and squash are cooked through.
  5. Garnish with parsley and serve.
