Ingredients
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 pound pork tenderloin, cut into cubes
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1/4 teaspoon ground black pepper
1/4 teaspoon salt
1 butternut squash, peeled and cut into cubes
1/2 cup chicken broth

Directions
In a large skillet, heat the oil over medium-high heat. Add the onion and garlic and cook, stirring, for 2 minutes.
Add the pork and cook, stirring, for 3 minutes. Add the cumin, paprika, coriander, cinnamon, pepper and salt and cook, stirring, for 1 minute.
Add the squash and chicken broth and bring to a boil. Reduce the heat to low and simmer, covered, for 15 minutes.
Uncover and cook for 5 minutes, or until the pork and squash are cooked through.
Garnish with parsley and serve.
