- 1 cup quinoa
- 2 cups vegetable broth
- 1 lemon, zested and juiced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped

Directions
- Rinse the quinoa in a mesh strainer and drain.
- In a medium saucepan, bring the vegetable broth to a boil.
- Add the quinoa, reduce the heat to low, cover, and cook for 15 minutes.
- In a small bowl, combine the lemon zest, lemon juice, thyme, rosemary, parsley, salt, and pepper.
- After the quinoa has cooked, remove the lid and fluff with a fork.
- Add the lemon-herb mixture to the quinoa and stir to combine.
- Heat the olive oil in a small skillet over medium-high heat.
- Add the quinoa and cook for 5 minutes, stirring occasionally.
