Ingredients
1 cup quinoa
2 cups vegetable broth
1 lemon, zested and juiced
1 tablespoon fresh thyme, chopped

Directions
Rinse the quinoa in a mesh strainer and drain.

Add the quinoa, reduce the heat to low, cover, and cook for 15 minutes.
In a small bowl, combine the lemon zest, lemon juice, thyme, rosemary, parsley, salt, and pepper.
After the quinoa has cooked, remove the lid and fluff with a fork.
Add the lemon-herb mixture to the quinoa and stir to combine.
Heat the olive oil in a small skillet over medium-high heat.
Add the quinoa and cook for 5 minutes, stirring occasionally.
Serve warm.
