Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 lemon, zested and juiced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

  1. Rinse the quinoa in a mesh strainer and drain.
  2. In a medium saucepan, bring the vegetable broth to a boil.
  3. Add the quinoa, reduce the heat to low, cover, and cook for 15 minutes.
  4. In a small bowl, combine the lemon zest, lemon juice, thyme, rosemary, parsley, salt, and pepper.
  5. After the quinoa has cooked, remove the lid and fluff with a fork.
  6. Add the lemon-herb mixture to the quinoa and stir to combine.
  7. Heat the olive oil in a small skillet over medium-high heat.
  8. Add the quinoa and cook for 5 minutes, stirring occasionally.
  9. Serve warm.
