- 1/2 cup vegan butter
- 1/2 cup brown sugar
- 1/4 cup molasses

Directions
- Preheat the oven to 350 degrees F. Grease and flour a 9-inch round cake pan.
- In a medium bowl, cream together the vegan butter and brown sugar until light and fluffy.
- Add the molasses, cinnamon, ginger, cloves, and nutmeg and mix until combined.
- In a small bowl, whisk together the almond milk and apple cider vinegar and set aside to curdle.
- In a large bowl, sift together the gluten-free flour, baking powder, baking soda, and salt.
- Add the wet ingredients to the dry ingredients and mix until combined.
- Pour the batter into the prepared cake pan and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely before slicing and serving.
