Ingredients

  • 1/2 cup vegan butter
  • 1/2 cup brown sugar
  • 1/4 cup molasses
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1 cup almond milk
  • 1 teaspoon apple cider vinegar
  • 2 cups gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Directions

  1. Preheat the oven to 350 degrees F. Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, cream together the vegan butter and brown sugar until light and fluffy.
  3. Add the molasses, cinnamon, ginger, cloves, and nutmeg and mix until combined.
  4. In a small bowl, whisk together the almond milk and apple cider vinegar and set aside to curdle.
  5. In a large bowl, sift together the gluten-free flour, baking powder, baking soda, and salt.
  6. Add the wet ingredients to the dry ingredients and mix until combined.
  7. Pour the batter into the prepared cake pan and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool completely before slicing and serving.
