Ingredients

  • 1 lb. of shrimp (peeled and deveined)
  • 1 cup of feta cheese (crumbled)
  • 1/4 cup of Espelette pepper (finely chopped)
  • 2 tablespoons of olive oil
  • 1/4 cup of white wine
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1 lb. of your favorite pasta (cooked according to package directions)
  • 1/4 cup of chopped fresh parsley (for garnish)

Directions

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Once the oil is hot, add the shrimp and cook until it is pink and cooked through, about 3 minutes.
  3. Add the Espelette pepper, salt, and pepper, and cook for an additional minute.
  4. Pour in the white wine and cook for another 4 minutes, stirring occasionally.
  5. Add the cooked pasta to the skillet and toss to combine.
  6. Stir in the feta cheese and cook until it is melted, about 1 minute.
  7. Garnish with the parsley and serve.
