Ingredients
- 1 lb. of shrimp (peeled and deveined)
- 1 cup of feta cheese (crumbled)
- 1/4 cup of Espelette pepper (finely chopped)
- 2 tablespoons of olive oil
- 1/4 cup of white wine
- 1/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 lb. of your favorite pasta (cooked according to package directions)
- 1/4 cup of chopped fresh parsley (for garnish)
Directions
- In a large skillet, heat the olive oil over medium-high heat.
- Once the oil is hot, add the shrimp and cook until it is pink and cooked through, about 3 minutes.
- Add the Espelette pepper, salt, and pepper, and cook for an additional minute.
- Pour in the white wine and cook for another 4 minutes, stirring occasionally.
- Add the cooked pasta to the skillet and toss to combine.
- Stir in the feta cheese and cook until it is melted, about 1 minute.
- Garnish with the parsley and serve.
