Ingredients

  • 1 pound ground beef
  • 1 can (15 ounces) refried beans
  • 1 package (1.25 ounces) taco seasoning mix
  • 1 package (10 ounces) corn chip taco shells
  • 1/2 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup sour cream (optional)
  • 1/4 cup chopped cilantro (optional)

Directions

  1. Preheat oven to 375°F.
  2. In a large skillet, cook ground beef over medium heat until browned.
  3. Stir in refried beans and taco seasoning mix and cook for 3 minutes, stirring occasionally.
  4. Remove from heat and set aside.
  5. Arrange taco shells on a baking sheet and bake for 5 minutes.
  6. Remove from oven and fill each taco shell with the beef and bean mixture.
  7. Top each taco with shredded cheese and return to oven for 5 minutes, or until cheese is melted.
  8. Remove from oven and top with lettuce, tomatoes, sour cream, and cilantro (if desired).
  9. Serve immediately.
