Ingredients

  • 3 cups of diced tomatoes
  • 1 cup of diced cucumber
  • 1/2 cup of diced red onion
  • 1/4 cup of olive oil
  • 1/4 cup of red wine vinegar

  • 1/4 teaspoon of salt
  • 1/4 teaspoon of freshly ground black pepper
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of chopped fresh cilantro
  • 1 pound of cooked and peeled shrimp

Directions

  1. In a large bowl, mix together the tomatoes, cucumber, and red onion.

  3. Pour the dressing over the vegetables and mix until well combined.
