Ingredients
- 4 pork chops
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste
- 2 tablespoons butter
- 1 red bell pepper, sliced
- 1 onion, sliced
- 1 jalapeno, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 2 potatoes, diced
- 1/4 cup chicken stock
Directions
- Preheat oven to 400°F. Grease a baking sheet with cooking spray.
- Combine the oregano, cumin, garlic powder, chili powder, cayenne pepper, salt, and pepper in a small bowl. Rub the mixture onto the pork chops.
- Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and cook until lightly browned, about 2 minutes per side.
- Remove the pork chops from the skillet and place them on the prepared baking sheet. Bake in the preheated oven for 15 minutes.
- Meanwhile, melt the butter in the same skillet. Add the bell pepper, onion, jalapeno, and garlic and sauté until the vegetables are softened, about 5 minutes.
- Add the tomatoes, potatoes, and chicken stock. Simmer for 10 minutes or until the potatoes are tender.
- Return the pork chops to the skillet and simmer for 5 minutes or until the pork chops are cooked through.
- Serve the pork chops and vegetables with the sauce.
