Ingredients
- 1 package firm tofu (400 g)
- 3 tablespoons extra virgin olive oil
- 2 tablespoons soy sauce
- 1 tablespoon balsamic vinegar
- 1 teaspoon maple syrup
- 2 cloves garlic, minced
- 1/4 cup capers, drained and rinsed
- Salt and black pepper, to taste
- 1/4 cup fresh parsley, chopped
Directions
- Cut the tofu into cubes and place in a bowl.
- In a separate bowl, mix together the olive oil, soy sauce, balsamic vinegar, maple syrup, garlic, and capers. Pour the mixture over the tofu and stir until the cubes are evenly coated.
- Cover the bowl and place in the refrigerator to marinate for at least one hour.
- When ready to serve, remove the tofu from the refrigerator and season with salt and black pepper to taste.
- Transfer the tofu to a serving plate and garnish with fresh parsley.
- Serve the marinated tofu salad with capers and enjoy!
