1/2 cup chopped nuts (almonds, walnuts, or pecans)
1/2 cup buttermilk
1/4 cup vegetable oil
1 egg
1/4 cup honey
Directions
Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Add the dates and nuts and stir to combine.
In a small bowl, whisk together the buttermilk, oil, egg, and honey. Add the wet ingredients to the dry ingredients and stir just until combined.
Divide the batter evenly among the prepared muffin cups. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
