Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 large potato, peeled and diced
- 1 bay leaf
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 pound peeled and deveined shrimp
- 1/2 cup crumbled feta cheese
Directions
- In a large saucepan, heat the olive oil over medium heat.
- Add the onion and garlic and cook until tender, about 5 minutes.
- Add the chicken broth, potato, bay leaf, oregano, salt and pepper. Bring to a boil, reduce the heat to low, cover and simmer for 10 minutes, or until the potato is tender.
- Add the shrimp and cook until they turn pink, about 5 minutes.
- Remove from the heat and stir in the feta cheese.
- Serve hot.
