In a large saucepan, heat the olive oil over medium heat.
Add the onion and garlic and cook until tender, about 5 minutes.
Add the chicken broth, potato, bay leaf, oregano, salt and pepper. Bring to a boil, reduce the heat to low, cover and simmer for 10 minutes, or until the potato is tender.
Add the shrimp and cook until they turn pink, about 5 minutes.
Remove from the heat and stir in the feta cheese.
Serve hot.
