Ingredients

  • 1 pound large sea scallops
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup diced mango
  • 1/2 cup diced papaya
  • 1/4 cup diced red onion
  • 1/4 cup diced red bell pepper
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1 tablespoon honey

Directions

  1. In a medium bowl, combine the mango, papaya, red onion, red bell pepper, cilantro, lime juice and honey and mix well.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Season the scallops with salt and pepper and add to the skillet.
  4. Cook the scallops for about 3-4 minutes per side, or until golden brown and cooked through.
  5. Serve the scallops with the salsa.
