Ingredients

  • 1 pound beef stew meat
  • 1 onion, diced
  • 3 carrots, diced
  • 3 stalks celery, diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 2 cups beef broth
  • 1 cup pearl barley
  • 2 cups fresh green beans, cut into 1 inch pieces
  • 1 cup frozen corn
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh parsley, for garnish

Directions

  1. In the bowl of a slow cooker, combine the beef stew meat, onion, carrots, celery, garlic, tomato paste, Worcestershire sauce, oregano, basil, paprika, and black pepper.
  2. Pour in the beef broth and stir to combine.
  3. Cover and cook on low for 7-8 hours.
  4. Add in the pearl barley and stir to combine.
  5. Add in the green beans, corn, and peas and stir to combine.
  6. Cover and cook on high for an additional 30 minutes.
  7. Serve the soup garnished with fresh parsley.
