Apple-Blueberry Buckle
Ingredients
1 cup adzuki bean paste
1 cup white sugar
1/4 cup butter
1/2 teaspoon salt
1/4 cup milk
2 cups all-purpose flour
1/4 cup vegetable oil
Directions
In a large bowl, mix together the adzuki bean paste, sugar, butter, and salt until well blended.
Add the milk and mix until combined.
Slowly add in the flour, one cup at a time, mixing until a dough forms.
Knead the dough on a lightly floured surface for 5 minutes.
Divide the dough into 12 equal pieces and roll each piece into a ball.
Flatten each ball into a 3-4 inch circle.
Fill each circle with 1 tablespoon of the adzuki bean paste.
Fold the edges of the circle over the filling and pinch to seal.
Place the mooncakes on a greased baking sheet and brush each cake with the vegetable oil.
Bake for 20-25 minutes at 350 degrees Fahrenheit.
Allow to cool before serving.
