Ingredients

  • 4 cups of potatoes, peeled and diced
  • 2 cups of chicken broth
  • 1 cup of milk
  • 2 tablespoons of butter
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 tablespoon of fresh parsley, chopped
  • 1/2 cup of shredded cheddar cheese (optional)

Directions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and garlic and cook until the onion is softened, about 5 minutes.
  3. Add the diced potatoes and stir to combine.
  4. Pour in the chicken broth and milk and stir to combine.
  5. Bring the soup to a low simmer and cook for 15 minutes, stirring occasionally, until the potatoes are tender.
  6. Remove the soup from the heat and add the salt, pepper, and parsley.
  7. Puree the soup with an immersion blender or in batches in a regular blender until desired consistency is reached.
  8. Serve the soup hot with shredded cheese and additional parsley, if desired.
