Ingredients

  • 1 package of seitan, cut into cubes
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of fresh ginger, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of garam masala
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of turmeric
  • 1/4 teaspoon of cayenne pepper
  • 1 can of coconut milk
  • Salt and pepper, to taste

Directions

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the onions and garlic and cook until the onions are softened, about 5 minutes.
  3. Add the ginger and spices and cook for 1 minute, stirring constantly.
  4. Add the seitan and cook for 5 minutes, stirring occasionally.
  5. Pour in the coconut milk and bring to a simmer.
  6. Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
  7. Season with salt and pepper, to taste.
  8. Serve with rice or naan.
