Ingredients
1 package of seitan, cut into cubes
1 onion, diced
2 cloves of garlic, minced
1 teaspoon of fresh ginger, minced
2 tablespoons of olive oil
1 teaspoon of garam masala
1 teaspoon of ground coriander
1/2 teaspoon of turmeric
1/4 teaspoon of cayenne pepper
1 can of coconut milk
Salt and pepper, to taste
Directions
In a large skillet, heat the olive oil over medium heat.
Add the onions and garlic and cook until the onions are softened, about 5 minutes.
Add the ginger and spices and cook for 1 minute, stirring constantly.
Add the seitan and cook for 5 minutes, stirring occasionally.
Pour in the coconut milk and bring to a simmer.
Reduce the heat to low and simmer for 15 minutes, stirring occasionally.
Season with salt and pepper, to taste.
Serve with rice or naan.
