Ingredients

  • 2 cups diced red bell peppers
  • 2 cups diced green bell peppers
  • 4 jalapenos, finely diced
  • 1 cup white vinegar
  • 1/4 cup honey
  • 2 teaspoons sea salt
  • 1 teaspoon ground black pepper
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons pectin

Directions

  1. In a large bowl, combine the bell peppers, jalapenos, vinegar, honey, salt, pepper, allspice, and cinnamon.
  2. Mix well and let the mixture sit for 30 minutes.
  3. Meanwhile, in a large pot, combine the pepper mixture with the pectin. Bring to a boil over medium-high heat, stirring constantly.
  4. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
  5. Remove from the heat and let cool for 5 minutes.
  6. Ladle the jelly into sterilized jars and seal.
  7. Store in the refrigerator for up to 2 weeks.
