Ingredients
- 2 slices of whole wheat bread
- 1 tablespoon of butter
- 1 tablespoon of olive oil
- 2 slices of cheese (any type)
- ¼ cup of thinly sliced vegetables (carrots, peppers, onion, etc.)
- 1 teaspoon of fresh herbs (basil, oregano, thyme, etc.)
- Salt and pepper to taste
Directions
- Heat the butter and olive oil in a skillet over medium heat.
- Add the vegetables and cook for 3-4 minutes until softened.
- Add the herbs and season with salt and pepper.
- Lay one slice of bread on the skillet and top with one slice of cheese.
- Spread the cooked vegetables on top of the cheese and top with the remaining slice of cheese.
- Top with the remaining slice of bread.
- Cook for 3-4 minutes until the cheese is melted and the bread is golden brown.
- Flip the sandwich and cook on the other side for 3-4 minutes.
- Serve warm and enjoy!
