Ingredients

  • 2 slices of whole wheat bread
  • 1 tablespoon of butter
  • 1 tablespoon of olive oil
  • 2 slices of cheese (any type)
  • ¼ cup of thinly sliced vegetables (carrots, peppers, onion, etc.)
  • 1 teaspoon of fresh herbs (basil, oregano, thyme, etc.)
  • Salt and pepper to taste

Directions

  1. Heat the butter and olive oil in a skillet over medium heat.
  2. Add the vegetables and cook for 3-4 minutes until softened.
  3. Add the herbs and season with salt and pepper.
  4. Lay one slice of bread on the skillet and top with one slice of cheese.
  5. Spread the cooked vegetables on top of the cheese and top with the remaining slice of cheese.
  6. Top with the remaining slice of bread.
  7. Cook for 3-4 minutes until the cheese is melted and the bread is golden brown.
  8. Flip the sandwich and cook on the other side for 3-4 minutes.
  9. Serve warm and enjoy!
