Ingredients

  • 1 cup uncooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained and rinsed
  • 1 can diced tomatoes with green chiles, drained
  • 1 cup low-sodium chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sharp cheddar cheese, shredded

Directions

  1. Add quinoa, beans, corn, tomatoes, broth, chili powder, cumin, garlic powder, salt, and pepper to the Instant Pot.
  2. Secure the lid and turn the valve to sealing.
  3. Set to high pressure for 5 minutes.
  4. Once cook time is complete, do a quick release of the pressure and remove the lid.
  5. Stir in cheese until melted.
  6. Serve in bowls with your favorite toppings (sour cream, avocado, cilantro, etc).
