Ingredients
- 1 cup uncooked quinoa
- 1 can black beans, drained and rinsed
- 1 can corn, drained and rinsed
- 1 can diced tomatoes with green chiles, drained
- 1 cup low-sodium chicken broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup sharp cheddar cheese, shredded
Directions
- Add quinoa, beans, corn, tomatoes, broth, chili powder, cumin, garlic powder, salt, and pepper to the Instant Pot.
- Secure the lid and turn the valve to sealing.
- Set to high pressure for 5 minutes.
- Once cook time is complete, do a quick release of the pressure and remove the lid.
- Stir in cheese until melted.
- Serve in bowls with your favorite toppings (sour cream, avocado, cilantro, etc).
