Ingredients

  • 2 cans of coconut milk
  • 1/4 cup of sugar
  • 1/4 cup of lime juice
  • 2 teaspoons of lime zest
  • 1 teaspoon of fresh mint, finely chopped

Directions

  1. Pour the coconut milk, sugar, lime juice, and lime zest into a medium-sized bowl and whisk until all the ingredients are well-combined and the sugar has dissolved.
  2. Transfer the mixture to a shallow container and cover with plastic wrap.
  3. Place the container into the freezer and freeze for 1-2 hours, stirring every 30 minutes.
  4. Once the ice cream is frozen, transfer it to a food processor or blender and blend until smooth.
  5. Stir in the chopped mint and return the ice cream to the freezer for 1-2 hours, or until it is frozen to your desired consistency.
  6. Serve the ice cream in small bowls and enjoy!
