Ingredients
4 white fish fillets (cod, halibut, or haddock)
1/2 cup heavy cream
1/3 cup lemon juice
2 tablespoons capers
1/4 cup chopped parsley
1 teaspoon garlic powder
Salt and pepper to taste
Directions
Preheat oven to 400°F (200°C).
Cut four sheets of foil, each about 12-inches (30 cm) square.
In a small bowl, whisk together cream, lemon juice, capers, parsley, garlic powder, salt, and pepper.
Place one fish fillet in the center of each foil sheet. Divide the lemon sauce among the fillets.
Fold the edges of the foil together to form a packet. Place the packets on a baking sheet.
Bake for 15-20 minutes, until the fish flakes easily with a fork.
Serve warm.
