Ingredients

  • 1 cup quinoa, cooked according to package instructions
  • 1/2 cup carrots, shredded
  • 1/2 cup green peas, cooked
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup almonds, chopped
  • 1/4 cup raisins
  • 1 tablespoon olive oil
  • 1 teaspoon curry powder
  • 1 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. In a large bowl, combine cooked quinoa, carrots, peas, red onion, cilantro, almonds and raisins.
  2. In a small bowl, whisk together olive oil, curry powder, honey, salt and pepper.
  3. Pour the dressing over the quinoa and vegetables and toss to combine.
  4. Refrigerate for at least 30 minutes before serving.
