Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 very ripe bananas, mashed
  • 1/2 cup vegetable oil
  • 3/4 cup granulated sugar
  • 1/2 cup lactose-free milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Directions

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a separate bowl, mash the bananas with a fork.
  4. Add oil, sugar, milk, and vanilla to the mashed bananas and mix until combined.
  5. Add the wet ingredients to the dry ingredients and mix just until combined.
  6. Gently fold in the blueberries.
  7. Fill greased or lined muffin tins 3/4 full with the muffin batter.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Cool on a wire rack.
