1 cup shredded cheese (cheddar, mozzarella, or a blend)
1/4 cup bread crumbs
2 tablespoons Parmesan cheese, grated
1/2 teaspoon Italian seasoning
Salt and pepper to taste
Directions
Preheat oven to 350°F (175°C). Grease an 8x8-inch baking dish.
Heat oil in a large skillet over medium-high heat. Add garlic, zucchini, onion, bell pepper, and mushrooms. Cook, stirring occasionally, until vegetables are tender, about 5 minutes.
In a large bowl, combine cooked vegetables, cheese, bread crumbs, Parmesan cheese, Italian seasoning, salt and pepper. Mix until well combined.
Spread mixture into prepared baking dish. Bake for 25 minutes, or until golden brown and bubbly.
Remove from oven and let cool for 5 minutes before slicing and serving.
