Ingredients

- 2 cups sparkling water
- Ice cubes

Directions
- Combine the rhubarb, sugar, lemon juice, and ginger in a medium saucepan.
- Heat over medium heat and cook, stirring occasionally, until the rhubarb is softened, about 10 minutes.
- Remove from heat and let cool.
- Strain the mixture through a fine mesh sieve into a pitcher.
- Add the sparkling water and stir to combine.
- Serve over ice and garnish with fresh mint leaves.
