Ingredients
2 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander

Directions
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic and cook, stirring occasionally, until the onion is translucent and soft, about 5 minutes.
Add the turmeric, cumin, coriander, ginger, cardamom, cinnamon, and red pepper flakes and cook for 1 minute, stirring constantly.
Add the chicken and cook for 5 minutes, stirring occasionally.
Add the carrots, celery, potatoes, and chicken broth and bring to a boil.
Reduce the heat to a simmer and cook for 20 minutes, or until the vegetables are tender and the chicken is cooked through.
Season with salt and pepper, to taste.
Garnish with cilantro and serve warm.
